Did you know there is a unique set of rules and regulations within Mexico called the NORMA Oficial Mexicana (NOM) that governs the production of mezcal? The NOM 070 regulation formalizes criteria for all aspects of mezcal production, from the agave plant itself right through labeling and bottling. Since 1995, all mezcal produced must be certified under NOM 070 in order to be sold or shipped as mezcal. Our distiller Fernando Santibañez assures that all guidelines of NOM 070 are followed in the crafting of Xicaru.
